Australia's oldest mainland brewery, Goulburn Brewery, has reopened after a two-year restoration, ushering in a new era that celebrates its rich heritage and the Southern Tablelands region. The 1836-established site now features the Maltings Bar and dining room, several function spaces, a modernised brewery, and the Goulburn Brewery Shop.

Under Head Brewer Neal Cameron, Goulburn Brewery has debuted its signature Wayback craft beer range. This range, featuring eight beers including lagers, stouts, and pale ales, uses hyper-local grains and traditional brewing methods inspired by the brewery's archives. Wayback can be enjoyed throughout the Goulburn Brewery and available for takeaway purchase.

Goulburn Brewery also offers a hyperlocal, a la carte menu led by Head Chef Christine Abeleda. The menu champions local Southern Tablelands producers and their produce plus also heroes the Wayback beer range through sauces and marinades. Highlights from the menu include a pork-knuckle brined in Wayback beer and a wattleseed and Wayback beer ice cream. The venue aims to bring the community together and showcase the region's history and local businesses.
