In 2022, celebrated chef Matt Moran put the tiny village of Rockley (population: less than 200) on the map when he reopened The Rockley Pub, 35km south of Bathurst.
Dine on elevated pub fare – think next-level burgers and schnitties, and fish and chips – along with food that’s more fine-diner such as flourless orange cake with ice-cream and almonds, burrata and roast beetroot salad, and pan-roasted barramundi.
Don’t be surprised if hands-on Moran is there to serve you himself. The star chef has big plans for the two-storey corner pub so watch this space.
On the second Sunday of each month, Rockley hosts an artisans’ market at the sportsground near the pub.
Before heading off, make sure you go for a drive around the town itself (it won’t take long!) to admire the period architecture and rolling landscapes.
Pure joy as you wake to the sunrise. Awe as you make it to the snowy peak. A sense of adventure as you motor across red plains. The relief of rejuvenation as you wade into an alpine stream. Connection as you taste native, fragrant leaves. A sense of belonging as you return to your favourite holiday house. Freedom as you dash into the waves.
